Food & Drink Experience
The Cotswolds Distillery lies in beautiful countryside on the edge of the Cotswolds. Back in 2014, it became the first full-scale distillery in the region. The distillery is the brainchild of a native New Yorker. After spending a number of years in London undeniably felt the draw of the English countryside. His original ideas particularly revolved around the beautiful fields of Barley and the production of whisky. Whisky however is not a quick process; it takes time and patience. Therefore whilst waiting for the whisky to mature, the Cotswold Distillery turned its hand to gin, which has a much shorter process. The rest, as they say, is history.
After more than two months of researching botanical recipes and distilling 150 botanical spirits, they were ready to begin. 60 recipes later just one recipe remained which became the now world-class Cotswold Dry Gin. Three years after the gin launch, the whisky was finally ready. In 2017 the much-anticipated Cotswold Signature Single Malt Whisky became part of the distillery collection. It was the first whisky to ever be distilled in the Cotswolds and unquestionably remains the heart of everything the Cotswold Distillery does. Today, the whisky offering has also been expanded to include the Cask Collection, single cask releases and a yearly limited-edition Hearts and Crafts series, which draws inspiration from the Cotswolds Art & Crafts movement. The gin range likewise encompasses the original dry gin along with three wildflower gins, a hedgerow gin, an Old Tom, and a popular Christmas gin.
The distillery is open for visits, tours, and tastings. Plus, gin and whisky blending masterclasses and cocktail-making lessons are also available. The Still House Café is a lovely spot for morning coffee and relaxed lunches. You may also get to see the distillers at work.
