Cheltenham’s only Michelin-star restaurant has been inspiring diners for 35 years and offers tantalisingly unique lunch and dinner menus. David Everitt-Matthias has been the co-owner and head chef of Le Champignon Sauvage in Suffolk Road since 1987, a joint venture he shares with his wife Helen who runs front of house. They recently celebrated the 35th anniversary of the restaurant which is consistently included in the Good Food Guide Top UK restaurants. David and Helen have also won the prestigious Observer Food Monthly ‘Outstanding Contribution’ Award and revered Times reviewer Marina O’Loughlin once gave Le Champignon Sauvage a rare 10 out of 10 for food. David is also the author of three highly regarded recipe books – Essence: Recipes from Le Champignon Sauvage; Dessert Recipes from Le Champignon Sauvage and Beyond Essence: New Recipes from Le Champignon Sauvage.
