Sample starters could include star anise and orange home-cured salmon, shaved fennel and apple and fennel marmalade or porcini mushroom tortellini, coffee-braised onion petals, Madeira reduction and tarragon cream. For the main course, be inspired by dishes such as seared and roasted tenderloin fillet of Gloucester Old Spot, black pudding croquette, salt-baked celeriac and pickled turnip or oven-based black cardamom hake, cauliflower puree, puffed spiced spelt, garam masala butter sauce, coriander, green chilli and onion instant chutney. Last but not least, dessert could be a delicious Madagascan chocolate marquise in chocolate cocoa pod, passionfruit curd and basil cream or blow-torched glazed peach, caramelised brioche wafer, buttermilk ice cream and raspberry vanilla gel. From three-course dinners to nine-course tasting menus, Ben can tailor a meal and experience that will leave you and your guests with lasting memories.
